  • 3 large eggs
  • 1 1/2 cups granulated sugar

  • 1/2 teaspoon baking powder
  • 1/4 cup fresh lemon juice
  • 1/4 cup shredded coconut, plus extra for topping
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Prepare the cookie base: In a large bowl, beat the cold butter with 1 cup of all-purpose flour and 1/4 cup of powdered sugar until the mixture resembles coarse crumbs. Press this mixture firmly into the bottom of a greased baking dish or lined cookie sheet.
  2. Shape and bake the cookies: Bake the pressed cookie base in the preheated oven for about 20 minutes or until lightly golden. Remove from the oven and allow it to cool slightly.
  3. Make the lemon coconut filling: In another bowl, whisk together the 3 large eggs, 1 1/2 cups of granulated sugar, 1/4 cup of flour, and 1/2 teaspoon of baking powder. Add in 1/4 cup of fresh lemon juice and 1/4 cup of shredded coconut. Mix until well combined.
  4. Cook the lemon filling: Pour the lemon filling over the slightly cooled cookie base. Bake it at 350°F (175°C) for an additional 20-25 minutes until the filling is set and lightly golden on top.
