- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup cold butter, cubed
- 3 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 cup fresh lemon juice
- 1/4 cup shredded coconut, plus extra for topping
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Prepare the cookie base: In a large bowl, beat the cold butter with 1 cup of all-purpose flour and 1/4 cup of powdered sugar until the mixture resembles coarse crumbs. Press this mixture firmly into the bottom of a greased baking dish or lined cookie sheet.
- Shape and bake the cookies: Bake the pressed cookie base in the preheated oven for about 20 minutes or until lightly golden. Remove from the oven and allow it to cool slightly.
- Make the lemon coconut filling: In another bowl, whisk together the 3 large eggs, 1 1/2 cups of granulated sugar, 1/4 cup of flour, and 1/2 teaspoon of baking powder. Add in 1/4 cup of fresh lemon juice and 1/4 cup of shredded coconut. Mix until well combined.
- Cook the lemon filling: Pour the lemon filling over the slightly cooled cookie base. Bake it at 350°F (175°C) for an additional 20-25 minutes until the filling is set and lightly golden on top.
- Assemble the cookies: Once cool, cut your Lemon Coconut Heaven into rectangles or squares. Sprinkle extra shredded coconut on top for an added touch.
Notes
For a burst of flavor, use fresh lemon juice and chill the cookie base for better texture.
