Delicious lemon crumb bars featuring a buttery crust topped with a tangy lemon filling, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1 cup granulated sugar (for the filling)
  • 1/4 cup all-purpose flour (for the filling)
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan.
  2. Mix together 1 cup of flour, 1/2 cup of granulated sugar, softened butter, and salt until crumbly. Press into the bottom of the prepared pan.
  3. Bake for 15 minutes.
  4. Whisk together 1 cup of granulated sugar, 1/4 cup of flour, eggs, lemon juice, and zest until smooth.
  5. Pour the lemon mixture over the pre-baked crust.
  6. Bake for an additional 20-25 minutes until set.
  7. Allow to cool completely before dusting with powdered sugar and cutting into bars.

Notes

Use fresh lemons for the best flavor. Let bars cool completely before adding powdered sugar.
