- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1 cup granulated sugar (for the filling)
- 1/4 cup all-purpose flour (for the filling)
- 2 large eggs
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan.
- Mix together 1 cup of flour, 1/2 cup of granulated sugar, softened butter, and salt until crumbly. Press into the bottom of the prepared pan.
- Bake for 15 minutes.
- Whisk together 1 cup of granulated sugar, 1/4 cup of flour, eggs, lemon juice, and zest until smooth.
- Pour the lemon mixture over the pre-baked crust.
- Bake for an additional 20-25 minutes until set.
- Allow to cool completely before dusting with powdered sugar and cutting into bars.
Notes
Use fresh lemons for the best flavor. Let bars cool completely before adding powdered sugar.
