- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Mix together the flour, softened butter, powdered sugar, and salt until crumbly. Press the mixture into the bottom of the prepared pan to form the crust.
- Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder until well combined.
- Pour the lemon filling over the crust and spread evenly.
- Bake in the preheated oven for 20-25 minutes, or until the filling is set and the edges are slightly golden.
- Allow to cool completely, then dust with powdered sugar and cut into bars. Serve and enjoy!
Notes
For best flavor, use fresh lemons. These bars can be stored at room temperature for 3-4 days or in the refrigerator for another 3-4 days.
