- 1 ½ cups all-purpose flour
- ⅔ cup granulated sugar
- ¼ tsp salt
- ¾ cup cold unsalted butter, cubed
- 1 tsp vanilla extract
- 2 large eggs
- ¾ cup granulated sugar
- 2 tbsp all-purpose flour
- 2 tbsp lemon zest (about 2 lemons)
- ⅓ cup fresh lemon juice
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your 8×8-inch baking pan by lining it with parchment paper.
- Whisk together the all-purpose flour, granulated sugar, and salt in a mixing bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Incorporate the vanilla extract into the crust mixture.
- Press two-thirds of the mixture firmly into the bottom of the prepared baking pan.
- In a medium bowl, whisk the eggs and ¾ cup sugar together until smooth.
- Add the remaining 2 tablespoons of flour, lemon zest, lemon juice, and a pinch of salt, whisking until blended.
- Pour the lemon filling over the warm crust.
- Sprinkle the reserved crumb mixture over the lemon filling.
- Bake for another 20-23 minutes until the filling is set and the topping is golden brown.
- Cool the bars in the pan for about 30 minutes before transferring to the refrigerator to chill for at least one hour.
- Slice the cooled bars into squares before serving.
Notes
Use fresh lemons for the best flavor and consider straining the lemon filling for a smoother texture.
