Ingredients

  • 1 ½ cups all-purpose flour
  • ⅔ cup granulated sugar
  • ¼ tsp salt
  • ¾ cup cold unsalted butter, cubed
  • 1 tsp vanilla extract
  • 2 large eggs
  • ¾ cup granulated sugar
  • 2 tbsp all-purpose flour
  • 2 tbsp lemon zest (about 2 lemons)
  • ⅓ cup fresh lemon juice
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your 8×8-inch baking pan by lining it with parchment paper.
  3. Whisk together the all-purpose flour, granulated sugar, and salt in a mixing bowl.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Incorporate the vanilla extract into the crust mixture.
  6. Press two-thirds of the mixture firmly into the bottom of the prepared baking pan.
  7. In a medium bowl, whisk the eggs and ¾ cup sugar together until smooth.
  8. Add the remaining 2 tablespoons of flour, lemon zest, lemon juice, and a pinch of salt, whisking until blended.
  9. Pour the lemon filling over the warm crust.
  10. Sprinkle the reserved crumb mixture over the lemon filling.
  11. Bake for another 20-23 minutes until the filling is set and the topping is golden brown.
  12. Cool the bars in the pan for about 30 minutes before transferring to the refrigerator to chill for at least one hour.
  13. Slice the cooled bars into squares before serving.

Notes

Use fresh lemons for the best flavor and consider straining the lemon filling for a smoother texture.
