- 3 cloves garlic
- 1/2 cup olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- For the pesto, combine basil, Parmesan (or nutritional yeast), pine nuts, and garlic in a food processor. Pulse until coarsely chopped.
- With the processor running, slowly add olive oil in a steady stream. Add lemon juice, salt, and pepper to taste.
- Grill chicken over medium-high heat for 6-7 minutes per side until internal temperature reaches 165°F.
- Top grilled chicken with fresh pesto before serving.

- For a dairy-free option, substitute Parmesan cheese with nutritional yeast.
