- 1/2 cup unsalted butter, softened

- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice

- 1/4 teaspoon salt
- 1 cup powdered sugar (for buttercream)
- 1/4 cup unsalted butter, softened (for buttercream)
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (for buttercream)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together 1/2 cup softened butter and 1/2 cup granulated sugar until light and fluffy.
- Beat in the egg, lemon zest, lemon juice, and culinary lavender buds.
- Gradually add flour and salt, mixing until just combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool completely.
- For the buttercream, beat together 1/4 cup softened butter and powdered sugar until fluffy.
- Add vanilla and milk, mixing until smooth.
- Spread the buttercream on the bottom side of half the cookies and sandwich them with the other half.
