  • 1 cup powdered sugar (for buttercream)
  • 1/4 cup unsalted butter, softened (for buttercream)
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (for buttercream)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together 1/2 cup softened butter and 1/2 cup granulated sugar until light and fluffy.
  3. Beat in the egg, lemon zest, lemon juice, and culinary lavender buds.
  4. Gradually add flour and salt, mixing until just combined.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes or until the edges are lightly golden.
  7. Allow to cool completely.
  8. For the buttercream, beat together 1/4 cup softened butter and powdered sugar until fluffy.
  9. Add vanilla and milk, mixing until smooth.
  10. Spread the buttercream on the bottom side of half the cookies and sandwich them with the other half.
