Ingredients

  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 tablespoon lemon zest
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Lemon glaze (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the lemon zest.
  5. Whisk together the heavy cream, egg, and vanilla extract in a separate bowl.
  6. Pour the wet ingredients into the dry ingredients and mix until just combined.
  7. Turn the dough onto a floured surface and gently knead it a few times.
  8. Pat the dough into a circle about 1 inch thick and cut into triangles.
  9. Place the scones on the prepared baking sheet and bake for 15-20 minutes until golden.
  10. If desired, drizzle with lemon glaze once cooled.

For best results, use fresh lemon zest and avoid over-mixing the dough.
