Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream the butter and sugar together in a mixing bowl until combined.
- Add the egg, vanilla, lemon juice, and lemon zest, mixing well until fully blended.
- Gradually stir in the flour, baking powder, salt, and baking soda until cohesive.
- Use a 1 tablespoon cookie scoop to create cookie dough balls, placing them about 1.5 inches apart on the prepared baking sheet.
- Bake for 7 minutes, just until the edges begin to turn golden.
- Remove from the oven and allow them to cool on the baking sheet for 10 minutes before transferring them to a cooling rack.
- Combine lemon juice with powdered sugar for the glaze, stirring until smooth. Drizzle over cooled cookies and allow to set completely.
