Instructions
- Preheat the oven to 350°F (175°C).
- Mix together the flour, softened butter, powdered sugar, and salt until crumbly.
- Stir in the egg yolk and form the dough into a ball.
- Press the dough into a tart pan. Blind bake for 15 minutes.
- Whisk together the lemon juice, granulated sugar, lemon zest, and eggs until smooth.
- Slowly add in the heavy cream, mixing well to combine.
- Pour the filling into the pre-baked tart shell.
- Bake for an additional 25-30 minutes until the filling is set.
- Allow the tart to cool fully before serving chilled.
