- 1/2 cup (120 ml) oat flour
- 1/2 cup (120 ml) Greek yogurt or Skyr, I’ve used 0%-2% and all worked great
- 1 egg
- 1 tbsp (15 ml) pure maple syrup
- 1/2 tsp (3 ml) vanilla extract
- 1/2 tsp (3 ml) baking powder
- 1/4 tsp (1 ml) baking soda
- 2 tbsp (30 ml) fresh lemon juice
- Zest from 1/2 a lemon
- Maple syrup to top
- Fresh berries
- Greek yogurt
Instructions
- Warm a spacious frying pan over a medium flame.
- In a mixing bowl, combine the yogurt, egg, lemon juice and zest, maple syrup, and vanilla by whisking them together.
- Gently incorporate the oat flour, baking powder, and baking soda into the mixture.
- Lightly coat your skillet with cooking spray and reduce the heat to a low-medium setting.
- Pour a quarter cup of the mixture onto the heated skillet, cooking one side for about one minute and the other for 30 seconds. Cook two to three pancakes simultaneously, depending on your pan’s dimensions.
- When finished, garnish with additional yogurt and drizzle with pure maple syrup!
