Description

A lighter yet creamy pasta dish featuring sautéed mushrooms, chicken, and a rich sauce, perfect for family gatherings.

Ingredients

Scale
  • 8 oz pasta (such as fettuccine or penne)
  • 1 cup cooked chicken, diced
  • 8 oz mushrooms, sliced
  • 1 cup heavy cream or a lighter alternative (like Greek yogurt)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and mushrooms, sautéing until mushrooms are tender.
  3. Stir in the cooked chicken and cook until heated through.
  4. Lower the heat, then add heavy cream or Greek yogurt, and Parmesan cheese, stirring until combined.
  5. Season with salt and pepper to taste.
  6. Toss in the cooked pasta, mixing thoroughly to coat.
  7. Garnish with fresh parsley before serving.

Notes

For a lighter twist, consider using zoodles (zucchini noodles) or spaghetti squash instead of traditional pasta. You can also substitute grilled shrimp or turkey for chicken.
