  • ½ cup limoncello
  • 1 ½ cups mascarpone cheese
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tablespoon vanilla extract
  • Extra limoncello for soaking

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Whisk together flour, baking powder, and salt in a mixing bowl.
  3. Beat the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, then mix in the buttermilk, lemon zest, and limoncello.
  5. Gradually add dry ingredients to the wet mixture and mix until just combined. Divide the batter evenly into prepared pans.
  6. Bake for 25-30 minutes until a toothpick comes out clean. Let cool completely.
  7. Beat mascarpone, heavy cream, powdered sugar, and vanilla extract until soft peaks form for the filling.
  8. Soak the cooled cake layers lightly with extra limoncello.
  9. Spread mascarpone filling between the layers and on the top and sides of the cake.
