Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1/2 cup limoncello
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Zest of 2 lemons
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Juice of 1 lemon
  • 1 cup confectioners’ sugar (for glaze)
  • 23 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the limoncello, milk, and lemon zest.
  5. Combine the flour, baking powder, and salt in another bowl. Gradually add to the wet mixture until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  9. Whip the heavy cream and powdered sugar until soft peaks form, then gently fold in the mascarpone cheese and lemon juice.
  10. Slice each cake in half horizontally to create four layers.
  11. Layer the cakes on a serving plate, spreading mascarpone filling between layers, finishing with the top cake layer.
  12. Mix the confectioners’ sugar and lemon juice until smooth and drizzle over the top of the cake.
  13. Chill in the refrigerator for at least 1 hour before serving.

Notes

For best results, do not overmix the batter and allow cakes to cool completely before slicing.
