- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup whole milk
- 3 large eggs
- 1/2 cup limoncello
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Zest of 2 lemons
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/4 cup powdered sugar
- Juice of 1 lemon
- 1 cup confectioners’ sugar (for glaze)
- 2–3 tablespoons lemon juice (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Cream together the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the limoncello, milk, and lemon zest.
- Combine the flour, baking powder, and salt in another bowl. Gradually add to the wet mixture until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- Whip the heavy cream and powdered sugar until soft peaks form, then gently fold in the mascarpone cheese and lemon juice.
- Slice each cake in half horizontally to create four layers.
- Layer the cakes on a serving plate, spreading mascarpone filling between layers, finishing with the top cake layer.
- Mix the confectioners’ sugar and lemon juice until smooth and drizzle over the top of the cake.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
For best results, do not overmix the batter and allow cakes to cool completely before slicing.
