Description

A comforting and hearty loaded baked potato soup featuring crispy bacon, creamy potatoes, and melted cheese.


Ingredients

  • 4 russet potatoes, washed, peeled, and cut into pieces
  • 56 pieces bacon, chopped
  • 2 tbsp butter
  • 1 white onion, diced
  • 2 garlic cloves, minced
  • 3 cups chicken stock
  • 2 cups milk
  • 2 tbsp flour
  • 1/2 cup sour cream
  • 1 cup green onions, sliced
  • 1 cup shredded cheese
  • Salt & pepper to taste

Instructions

  1. In a large pot, cook the bacon over medium heat until crisp. Remove bacon, leaving drippings in the pot.
  2. Add butter, onion, and garlic to the pot, then cook until the onion becomes soft.
  3. Stir in flour and cook for an additional minute to eliminate any raw flour taste.
  4. Gradually add chicken stock and milk, stirring constantly until the mixture is smooth.
  5. Add the prepared potatoes, season with salt and pepper, then bring to a boil. Reduce the heat and simmer until the potatoes are tender.
  6. Remove the pot from heat and stir in sour cream, green onions, and cheese until everything is well combined and heated through.
  7. Serve the soup topped with crispy bacon, extra cheese, and a sprinkle of green onions if desired.

Notes

For a spicier kick, consider adding diced jalapeños or a dash of hot sauce to the soup. Tailor the toppings to your preference.
