A comforting and hearty loaded baked potato soup featuring crispy bacon, creamy potatoes, and melted cheese.

- 4 russet potatoes, washed, peeled, and cut into pieces
- 5–6 pieces bacon, chopped
- 2 tbsp butter
- 1 white onion, diced
- 2 garlic cloves, minced
- 3 cups chicken stock
- 2 cups milk
- 2 tbsp flour
- 1/2 cup sour cream
- 1 cup green onions, sliced
- 1 cup shredded cheese
- Salt & pepper to taste
Instructions
- In a large pot, cook the bacon over medium heat until crisp. Remove bacon, leaving drippings in the pot.
- Add butter, onion, and garlic to the pot, then cook until the onion becomes soft.
- Stir in flour and cook for an additional minute to eliminate any raw flour taste.
- Gradually add chicken stock and milk, stirring constantly until the mixture is smooth.
- Add the prepared potatoes, season with salt and pepper, then bring to a boil. Reduce the heat and simmer until the potatoes are tender.
- Remove the pot from heat and stir in sour cream, green onions, and cheese until everything is well combined and heated through.
- Serve the soup topped with crispy bacon, extra cheese, and a sprinkle of green onions if desired.
Notes
For a spicier kick, consider adding diced jalapeños or a dash of hot sauce to the soup. Tailor the toppings to your preference.
