- 4 large russet potatoes
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 4 slices of bacon, cooked and crumbled
- 1/4 cup green onions, chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Scrub the potatoes, then pierce them several times with a fork.
- Bake potatoes directly on the oven rack for about 45-60 minutes until they’re tender.
- Remove potatoes from the oven and let cool slightly.
- Cut a slit in the top of each potato and carefully scoop out some flesh into a bowl, leaving a bit of potato in the skin.
- Mash the scooped-out potato with sour cream, butter, salt, and pepper until creamy.
- Stir in half of the cheese, half of the bacon, and half of the green onions.
- Spoon the mixture back into the potato skins.
- Top with the remaining cheese, bacon, and green onions.
- Return to the oven and bake for an additional 10 minutes until heated through and cheese is melted.
Notes
Experiment with different toppings like garlic powder or jalapeños for added flavor. Store leftovers in the refrigerator and reheat in the oven for best results.
