- 4 cups Hash browns
- 1 cup Sausage, diced
- 1 cup Ham, diced
- 1 cup Cheese, shredded
- 4 Eggs
- 1 cup Bell peppers, diced
- 1 cup Onion, diced
- Salt, to taste
- Pepper, to taste
- 2 tbsp Olive oil
Instructions
- In a skillet, heat olive oil over medium heat.
- Add diced onion and bell peppers, cooking until softened.
- Add sausage and ham, cooking until heated through.
- Stir in hash browns and cook until crispy.
- Push mixture to the side and crack eggs into the skillet, cooking to desired doneness.
- Sprinkle with cheese and allow to melt before serving.
- Season with salt and pepper to taste.
