Instructions
- In a large pot, combine the diced potatoes and chicken broth. Bring to a boil and cook until potatoes are tender, about 15-20 minutes.
- Reduce heat and stir in heavy cream, cheese, bacon, and sour cream. Mix well and cook until cheese is melted.
- Use a potato masher to slightly mash the soup for thickness while leaving some chunks of potato.
- Season with salt and pepper to taste.
