  • Yield: 4 servings 1x
  • Diet: Vegetarian (if using vegetable broth)

Description

A heartwarming loaded potato soup filled with creamy texture, cheesy goodness, and topped with crumbled bacon and green onions.

Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 cup onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 3 slices cooked bacon, crumbled
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the chopped onion until softened.
  2. Add the diced potatoes and broth, bringing the mixture to a boil. Then reduce the heat and let it simmer until the potatoes are tender, about 15 to 20 minutes.
  3. Mash some of the potatoes with a fork or a potato masher for a creamy texture while leaving some chunks for heartiness.
  4. Stir in the milk, shredded cheddar cheese, sour cream, and season with salt and pepper to taste.
  5. Top the soup with crumbled bacon and chopped green onions before serving.

Notes

Let the soup sit for a few minutes after cooking to allow flavors to meld. Consider reserving toppings for a beautiful presentation.
