Ingredients

  • 2 large potatoes, diced
  • 1 lb ground beef or turkey
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1 cup cheddar cheese, shredded
  • 1 tsp taco seasoning
  • Salt and pepper to taste
  • Olive oil
  • Chopped fresh cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until crispy.
  3. In a skillet over medium heat, cook the ground meat until browned. Drain excess fat.
  4. Add the taco seasoning to the cooked meat along with corn and black beans. Stir until heated through.
  5. In bowls, layer the roasted potatoes, taco meat mixture, diced bell peppers, and top with shredded cheese and avocado.
  6. Garnish with fresh cilantro and serve immediately.

Notes

Allow roasted potatoes to rest for a few minutes before layering to keep them crispy. Customize toppings to your taste.
