- 2 large potatoes, diced
- 1 lb ground beef or turkey
- 1 cup corn
- 1 cup black beans, drained and rinsed
- 1 bell pepper, diced
- 1 avocado, diced
- 1 cup cheddar cheese, shredded
- 1 tsp taco seasoning
- Salt and pepper to taste
- Olive oil
- Chopped fresh cilantro for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until crispy.
- In a skillet over medium heat, cook the ground meat until browned. Drain excess fat.
- Add the taco seasoning to the cooked meat along with corn and black beans. Stir until heated through.
- In bowls, layer the roasted potatoes, taco meat mixture, diced bell peppers, and top with shredded cheese and avocado.
- Garnish with fresh cilantro and serve immediately.
Notes
