- 1 12 ounce (340 g) bag froz en spinach cooked, drained, and ALL the liquid pressed out
- 1 cup (240 ml) cooked beef sausage
- 4 ounce (113 g) s cream cheese, softened
- 3 large eggs, beaten
- 1/3 cup (80 ml) coconut flour
- 1/2 teaspoon (3 ml) baking powder
- 1/4 teaspoon (1 ml) salt
- 1 1/4 cup (300 ml) shredded cheese, any variety
Instructions
- Set your oven to 350°F to warm it up.
- Follow the package instructions to cook the spinach. Once it’s done, remove all the moisture by pressing it out and let it sit on paper towels for a few moments to soak up any extra dampness.
- Mix the dry spinach with softened cream cheese, beef sausage, and beaten eggs in a bowl.
- Add in the coconut flour, baking powder, salt, and shredded cheese, stirring well. Let this mixture rest in the refrigerator for at least 10 minutes.
- Use a small cookie scoop to portion out the mixture and place them on a baking sheet. Cook in the oven at 350°F for 15-18 minutes.
