  • 1 12 ounce (340 g) bag froz en spinach cooked, drained, and ALL the liquid pressed out
  • 1 cup (240 ml) cooked beef sausage
  • 4 ounce (113 g) s cream cheese, softened
  • 3 large eggs, beaten
  • 1/3 cup (80 ml) coconut flour
  • 1/2 teaspoon (3 ml) baking powder
  • 1/4 teaspoon (1 ml) salt
  • 1 1/4 cup (300 ml) shredded cheese, any variety

Instructions

  1. Set your oven to 350°F to warm it up.
  2. Follow the package instructions to cook the spinach. Once it’s done, remove all the moisture by pressing it out and let it sit on paper towels for a few moments to soak up any extra dampness.
  3. Mix the dry spinach with softened cream cheese, beef sausage, and beaten eggs in a bowl.
  4. Add in the coconut flour, baking powder, salt, and shredded cheese, stirring well. Let this mixture rest in the refrigerator for at least 10 minutes.
  5. Use a small cookie scoop to portion out the mixture and place them on a baking sheet. Cook in the oven at 350°F for 15-18 minutes.
