Description

A delightful dessert that combines sweet and tangy lemon filling with a light and fluffy cobbler batter.

Ingredients

Scale
  • 1/2 cup butter
  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1 can (21 oz) lemon pie filling

Instructions

  1. Preheat your oven to 350°F and prepare your baking dish with melted butter.
  2. Mix the flour, sugar, baking powder, and salt together in a large bowl.
  3. Gradually stir in the buttermilk, followed by the melted butter, vanilla, and lemon extract until combined.
  4. Pour the batter into the baking dish over the melted butter.
  5. Spoon the lemon pie filling evenly over the batter. Don’t stir; let it work its magic!
  6. Bake in the preheated oven for 35-40 minutes or until the top becomes golden brown and the lemon filling bubbles.
  7. Allow the cobbler to cool slightly before serving, as the filling will be hot.

Notes

For added richness, serve with whipped cream or vanilla ice cream. Store leftovers in an airtight container at room temperature for up to two days.
