  • ½ teaspoon ground black pepper
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • 68 corn tortillas
  • Shredded cabbage slaw
  • Sliced red onion
  • Fresh cilantro
  • ½ cup mayo
  • 2 tablespoons hot sauce
  • 1 tablespoon honey
  • Salt and pepper (to taste; about ½ teaspoon salt and ¼ teaspoon pepper is usual)
  • Juice of 1 lime
  • Mango salsa (optional, but highly recommended)

Instructions

  1. Lightly pat the mahi mahi filets dry with a paper towel.
  2. Prepare the spice blend by combining garlic powder, onion powder, paprika, oregano, chili powder, kosher salt, and black pepper in a small bowl.
  3. Season the filets liberally on both sides with the spice mixture.
  4. Heat butter and olive oil in a cast iron pan over medium-high heat. Once hot, add the filets.
  5. Cook for several minutes on one side until golden brown. Avoid touching the filets while they cook.
  6. Carefully flip the fish with a spatula and cook until opaque and flakey, about 3-4 more minutes.
  7. Squeeze lemon juice over the cooked fish.
  8. For the creamy spicy sauce, mix mayo, hot sauce, honey, salt, pepper, and a squeeze of lime in a bowl.
  9. Assemble the tacos by placing fish on corn tortillas, topping with cabbage slaw, sliced red onion, cilantro, and a drizzle of the creamy sauce. Add mango salsa for an extra kick.
