- 6 large eggs (6)
- 1/2 tsp. baking soda (2.5 ml)
- 5 slices beef bacon
- 3 tbsp. maple syrup (45 ml)
- 1/4 c. vegetable oil (60 ml)
- 1 tsp. apple cider vinegar (5 ml)
- 1 tsp (5 ml). mustard
- Kosher salt
- Freshly ground black pepper
- Paprika, for serving
- Chopped chives, for serving
Instructions
- Place the eggs in a large pot, add cold water and the baking soda, then set the pot over medium-high heat until the water comes to a rolling boil. Once boiling, turn off the heat, cover the pot, and let the eggs sit for 11 minutes. Afterward, drain the water, cool the eggs under cold running water, and remove their shells.
- While the eggs are cooking, lay the bacon slices in a medium frying pan and cook them over medium heat until they are crispy on one side, which should take about 6 minutes. Lower the heat to medium-low, brush the bacon with maple syrup, turn them over, and coat the other side. Continue cooking until the second side is also crispy. Transfer the bacon to a plate to cool completely.
- Slice the eggs in half lengthwise and remove the yolks, placing them in a medium-sized bowl. Mash the yolks thoroughly with a fork. Combine the yolks with mayonnaise, vinegar, and mustard, stirring until the mixture is smooth. Crumble three slices of the cooled bacon and add them to the yolk mixture, then season with salt and pepper to taste.
- Using a small scoop, fill each egg white with the yolk mixture. Crumble the remaining two slices of bacon over the filled eggs. Lightly sprinkle paprika and chopped chives over the top before serving.
