  • 1/2 cup (120 ml) vegetable oil
  • 1 3/4 cup (420 ml) all-purpose flour
  • 1/2 tsp (3 ml) kosher salt
  • 1 tsp (5 ml) baking soda
  • 4 tbsp (60 ml) s vegetable oil
  • 1/2 cup (120 ml) brown sugar
  • 1/2 cup (120 ml) all-purpose flour
  • 2 tsp (10 ml) s cinnamon

Instructions

  1. Set the oven to 350 degrees F to preheat. In a small bowl, stir together vegetable oil, brown sugar, all-purpose flour, and cinnamon until the mixture is crumbly. Place in the refrigerator until needed.
  2. In a large mixing bowl, mash the bananas thoroughly. Add in brown sugar, maple syrup, maple extract, cinnamon, the egg, and vegetable oil. Stir the mixture until everything is well blended. Incorporate flour, salt, and baking soda, and mix until the batter is combined, though it may remain slightly lumpy.
  3. Prepare a 9×5 baking pan by coating it with nonstick spray and pour in the batter. Sprinkle the cinnamon streusel evenly over the top to cover it completely. Bake for an hour.
