  • 1 tablespoon (15 ml) balsamic vinegar (15 milliliters)
  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 1/4 teaspoon (1 ml) black pepper (1.25 grams)
  • 1 tablespoon (15 ml) fresh thyme leaves (optional) (15 grams)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the carrots.
  3. Cut the carrots into evenly sized sticks or rounds.
  4. Place the carrots on a large baking sheet.
  5. Drizzle the carrots with olive oil.
  6. Add salt and black pepper to the carrots.
  7. Toss the carrots until they are evenly coated.
  8. Spread the carrots in a single layer on the baking sheet.
  9. Roast the carrots in the preheated oven for 20 minutes.
  10. In a small bowl, mix the maple syrup and balsamic vinegar.
  11. After 20 minutes, remove the carrots from the oven.
  12. Drizzle the maple syrup mixture over the carrots.
  13. Toss the carrots to coat them with the glaze.
  14. Return the carrots to the oven.
  15. Roast for an additional 10-15 minutes, until tender.
