- 2 tablespoons (30 ml) vegetable oil (30 milliliters)
- 1/4 cup (60 ml) pure maple syrup (60 milliliters)
- 1 tablespoon (15 ml) balsamic vinegar (15 milliliters)
- 1/2 teaspoon (3 ml) salt (2.5 grams)
- 1/4 teaspoon (1 ml) black pepper (1.25 grams)
- 1 tablespoon (15 ml) fresh thyme leaves (optional) (15 grams)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the carrots.
- Cut the carrots into evenly sized sticks or rounds.
- Place the carrots on a large baking sheet.
- Drizzle the carrots with olive oil.
- Add salt and black pepper to the carrots.
- Toss the carrots until they are evenly coated.
- Spread the carrots in a single layer on the baking sheet.
- Roast the carrots in the preheated oven for 20 minutes.
- In a small bowl, mix the maple syrup and balsamic vinegar.
- After 20 minutes, remove the carrots from the oven.
- Drizzle the maple syrup mixture over the carrots.
- Toss the carrots to coat them with the glaze.
- Return the carrots to the oven.
- Roast for an additional 10-15 minutes, until tender.
- Remove from the oven and sprinkle with fresh thyme, if using.
