  • 1 lb venison sausages
  • 3 tbsp pure maple syrup
  • 1 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 20 fresh sage leaves
  • 2 medium sweet potatoes, diced
  • 1 large apple, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt and pepper on a baking sheet.
  2. Roast sweet potatoes for 15 minutes, then add apple slices and roast for another 10 minutes until tender.
  3. While vegetables are roasting, cook venison sausages in a skillet over medium heat until browned and cooked through, about 12-15 minutes.
  4. In a small bowl, whisk together maple syrup, balsamic vinegar, and minced garlic.
  5. Pour the maple mixture over the cooked sausages and simmer for 2-3 minutes until the sauce thickens into a glaze.
  6. In a separate small pan, melt butter over medium heat. Add sage leaves and fry until crisp, about 30 seconds. Remove and drain on paper towels.
  7. Arrange roasted sweet potatoes and apples on plates, top with glazed venison sausages, and garnish with crispy sage leaves.
