  • 1 1/2 tbsp (21g) coconut oil, melted and cooled slightly
  • 1 large egg (room temperature)
  • 1/2 cup (120mL) pure maple syrup (room temperature)
  • 4 tsp (20 ml) maple extract
  • 3 tbsp (42g) finely diced pecans

Instructions

  1. In a medium-sized bowl, combine the oats, whole wheat flour, baking powder, cinnamon, and salt using a whisk.
  2. In a different bowl, blend the melted coconut oil and the egg using a whisk.
  3. Add the pure maple syrup to the egg mixture and mix until fully combined.
  4. Mix in the maple extract thoroughly.
  5. Add the oat mixture to the liquid ingredients and stir just until blended.
  6. Carefully fold in 2 ½ tablespoons of the chopped pecans.
  7. Refrigerate the cookie dough for 20 minutes.
  8. Set the oven to 325°F and prepare a baking sheet with either a silicone mat or parchment paper.
  9. Using a spoon and spatula, drop the dough onto the sheet in 15 rounded portions.
  10. Use a spatula to flatten each to ⅜”-thick.
  11. Press the remaining pecans gently onto the tops of the cookies.
  12. Bake in the oven at 325°F for 9-11 minutes.
  13. Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack.
