  • 1/2 teaspoon (3 ml) baking soda (2.5 grams)
  • 1/2 teaspoon (3 ml) ground cinnamon (1 gram)
  • 1/4 teaspoon (1 ml) salt (1.5 grams)
  • 1/2 cup (120 ml) unsalted butter, softened (113 grams)
  • 1/3 cup (80 ml) maple syrup (80 milliliters)
  • 1/4 cup (60 ml) brown sugar, packed (50 grams)
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 1 large ripe banana, mashed (about 120 grams)
  • 1/2 cup (120 ml) chopped pecans (60 grams)
  • 1/4 cup (60 ml) dried cranberries (40 grams)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the rolled oats, all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Mix well.
  3. In a large bowl, beat the softened butter, maple syrup, and brown sugar until smooth and creamy.
  4. Add the vanilla extract and mashed banana to the butter mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chopped pecans and raisins until evenly distributed.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  10. Transfer the cookies to a wire rack to cool completely before serving.

Notes

  • Toast the chopped pecans in a dry skillet over medium heat for extra crunch before adding to the cookie dough.
  • Choose ripe bananas with brown spots for the sweetest and most flavorful cookies.
  • Try substituting dried cranberries with raisins or chopped apricots for a different taste in the cookies.
