  • 2 tablespoons (30 ml) pure maple syrup
  • 1/2 teaspoon (3 ml) ground cinnamon
  • Chopped candied pecans or candied walnuts, for garnish, optional

Instructions

  1. – Set your oven to 425°F and prepare a big baking sheet by lining it with parchment or foil, then lightly coat it with a nonstick spray.
  2. – Arrange the cubed sweet potatoes on the baking sheet. Pour vegetable oil over them and mix until they’re fully covered. Spread them out so they aren’t touching, and sprinkle with kosher salt.
  3. – Put the tray in the oven and bake for 20 minutes.
  4. – While they’re roasting, combine the pure maple syrup with ground cinnamon in a small dish.
  5. – Take the tray out and pour the maple and cinnamon mixture over the sweet potatoes. Mix until they’re evenly coated, and ensure they’re spread out in a single layer.
  6. – Place them back in the oven for an additional 5 to 10 minutes, depending on your preference for crispiness. Stir them halfway through to ensure even cooking. It’s a good idea to check them at the 5-minute mark.
