  • 4 ripe bananas, mashed (about 2 cups or 480 ml)
  • 1/4 cup maple syrup (60 ml)
  • 1/2 cup chopped walnuts (60 g)
  • 1/4 cup plain yogurt (60 ml)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×13-inch baking pan.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. In a large bowl, cream the softened butter and sugar until light and fluffy.
  5. Add the eggs one at a time, beating well after each addition.
  6. Stir in the vanilla extract.
  7. Mix in the mashed bananas and maple syrup until well combined.
  8. Add half of the flour mixture to the banana mixture and stir gently.
  9. Mix in the yogurt or sour cream until smooth.
  10. Add the remaining flour mixture and stir until just combined.
  11. Fold in the chopped walnuts.
  12. Pour the batter into the prepared baking pan.
  13. Smooth the top with a spatula.
  14. Bake in the preheated oven for 45-50 minutes or until a toothpick inserted in the center comes out clean.
