  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 2 tbsp butter
  • Fresh basil or parsley, for garnish

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. In a bowl, whisk together chicken broth, heavy cream, Parmesan cheese, minced garlic, dried oregano, dried thyme, and red pepper flakes.
  3. Place the seasoned chicken in the crockpot and pour the sauce over the top.
  4. Sprinkle the chopped sun-dried tomatoes over the chicken.
  5. Cook on LOW for 4 hours or HIGH for 2 hours, until chicken is tender and cooked through.
  6. Add butter during the last 30 minutes of cooking and stir to combine.
