Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 10 oz linguine or fettuccine pasta (cooked al dente)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1/2 cup chicken broth
  • 2 tbsp butter
  • 1 tbsp fresh basil, chopped (for garnish)

Instructions

  1. Boil the pasta according to package instructions until al dente. Reserve 1/2 cup of the cooking water and drain the rest.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant.
  3. Introduce the shrimp to the skillet. Sear until they turn pink, approximately 3-5 minutes. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, melt the butter. Stir in sun-dried tomatoes and chicken broth, simmering on low heat.
  5. Pour in the cream and add the grated Parmesan cheese. Stir until the mixture thickens, about 3-4 minutes.
  6. Return the shrimp to the skillet, incorporating them into the sauce.
  7. Toss the cooked pasta with the shrimp and sauce, adding reserved pasta water as necessary for desired consistency.
  8. Garnish with fresh basil before serving.

Notes

Serve with extra Parmesan cheese and a side salad for a complete meal.
