- 1 lb large shrimp, peeled and deveined
- 10 oz linguine or fettuccine pasta (cooked al dente)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (adjust to taste)
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream (or coconut cream for dairy-free)
- 1/2 cup chicken broth
- 2 tbsp butter
- 1 tbsp fresh basil, chopped (for garnish)
Instructions
- Boil the pasta according to package instructions until al dente. Reserve 1/2 cup of the cooking water and drain the rest.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant.
- Introduce the shrimp to the skillet. Sear until they turn pink, approximately 3-5 minutes. Remove the shrimp from the skillet and set aside.
- In the same skillet, melt the butter. Stir in sun-dried tomatoes and chicken broth, simmering on low heat.
- Pour in the cream and add the grated Parmesan cheese. Stir until the mixture thickens, about 3-4 minutes.
- Return the shrimp to the skillet, incorporating them into the sauce.
- Toss the cooked pasta with the shrimp and sauce, adding reserved pasta water as necessary for desired consistency.
- Garnish with fresh basil before serving.
Notes
Serve with extra Parmesan cheese and a side salad for a complete meal.
