  • 2 1/2 tablespoons Cento tomato paste
  • 1/2 cup Cento sun-dried tomatoes (diced)
  • 1 tablespoon Italian seasoning
  • 1/3 teaspoon sweet smoked paprika
  • 1/2 teaspoon salt
  • 3/4 teaspoon dried basil
  • 2 tablespoons gluten-free 1:1 flour
  • 2 cups diced spinach
  • 2 tablespoons butter
  • 2 tablespoons minced onion
  • 2 tablespoons minced garlic
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese
  • Fresh basil (chopped for garnish)
  • 12 oz gluten-free penne

Instructions

  1. Cook the gluten-free penne according to the package instructions. Drain and set aside.
  2. In a large skillet, heat sunflower tomato oil over medium heat. Add minced onion and garlic, sautéing until fragrant.
  3. Add the shrimp, smoked paprika, Italian seasoning, black pepper, and salt. Cook until the shrimp turns pink, about 3-4 minutes.
  4. Stir in the diced sun-dried tomatoes, tomato paste, and vegetables, cooking for another 2-3 minutes until heated through.
  5. Mix gluten-free flour with the mixture to thicken it, then pour in the vegetable broth and heavy cream. Stir until well blended.
  6. Reduce heat and let the sauce simmer. Incorporate Parmesan cheese until melted and smooth.
  7. Combine the cooked penne and spinach. Garnish with fresh basil, and serve.

Choose fresh ingredients for the best flavor. Adjust seasoning to taste, and consider adding red pepper flakes for heat.
