- 120g Unsalted butter (1/2 cup), room temperature
- 90g Brown sugar (1/2 cup)
- 100g White sugar (1/2 cup)
- 1 tsp (5 ml) Vanilla extract
- 1 Egg
- 200g All-purpose flour (1 2/3 cup)
- 1/2 tsp (3 ml) Baking powder
- 1/2 tsp (3 ml) Baking soda
- Big pinch of salt
- 110g Dark chocolate (3.8 oz), 70% cocoa
- 50g Mini marshmallows (1.7 oz) made with fish gelatin
- Flakey salt
Instructions
- Place butter, brown sugar, and white sugar into the bowl of a stand mixer, and blend for 1-2 minutes until the mixture is light and airy.
- Add the egg and vanilla extract, then continue to mix until fully incorporated.
- In a separate bowl, combine flour, baking soda, baking powder, and a generous pinch of salt, and whisk them together.
- Gradually incorporate the dry mixture into the butter blend, mixing on a low setting until just merged.
- Stir in the chocolate and half of the mini marshmallows until evenly distributed.
- Refrigerate the dough for at least one hour.
- Set your oven to 180°C (355°F) to preheat.
- Cover a large baking sheet or two smaller ones with parchment paper.
- Divide the dough into 12 even portions, spacing them about 7 cm (3 inches) apart on the tray.
- Gently press the remaining marshmallows into the tops of the dough balls, flattening them slightly.
- Bake for 13 minutes or until the cookies turn a golden brown.
- Let them cool, sprinkle with a touch of flaky salt, and enjoy!
