Ingredients

  • 120g Unsalted butter (1/2 cup), room temperature
  • 90g Brown sugar (1/2 cup)
  • 100g White sugar (1/2 cup)
  • 1 tsp (5 ml) Vanilla extract
  • 1 Egg
  • 200g All-purpose flour (1 2/3 cup)
  • 1/2 tsp (3 ml) Baking powder
  • 1/2 tsp (3 ml) Baking soda
  • Big pinch of salt
  • 110g Dark chocolate (3.8 oz), 70% cocoa
  • 50g Mini marshmallows (1.7 oz) made with fish gelatin
  • Flakey salt

Instructions

  1. Place butter, brown sugar, and white sugar into the bowl of a stand mixer, and blend for 1-2 minutes until the mixture is light and airy.
  2. Add the egg and vanilla extract, then continue to mix until fully incorporated.
  3. In a separate bowl, combine flour, baking soda, baking powder, and a generous pinch of salt, and whisk them together.
  4. Gradually incorporate the dry mixture into the butter blend, mixing on a low setting until just merged.
  5. Stir in the chocolate and half of the mini marshmallows until evenly distributed.
  6. Refrigerate the dough for at least one hour.
  7. Set your oven to 180°C (355°F) to preheat.
  8. Cover a large baking sheet or two smaller ones with parchment paper.
  9. Divide the dough into 12 even portions, spacing them about 7 cm (3 inches) apart on the tray.
  10. Gently press the remaining marshmallows into the tops of the dough balls, flattening them slightly.
  11. Bake for 13 minutes or until the cookies turn a golden brown.
  12. Let them cool, sprinkle with a touch of flaky salt, and enjoy!
