Mayak eggs are addictive soft-boiled eggs marinated in a savory-sweet soy sauce mixture, perfect as a side dish or snack.

- 6 large eggs
- 1 tablespoon vinegar (optional for boiling eggs)
- ¼ medium yellow onion, finely chopped (about ⅓ cup)
- 3 cloves garlic, minced (about 2 tablespoons)
- 1 stalk green onion, sliced
- 1 chili pepper, finely chopped or sliced (optional for spice)
- 1 tablespoon toasted sesame seeds
- 10 tablespoons soy sauce (low sodium preferred, about ½ cup + 2 tablespoons)
- 5 tablespoons honey (or alternative syrups like rice or corn syrup)
- ¼ cup water
Instructions
- Boil the eggs. In a pot, bring water to a boil. Gently place the eggs in the boiling water and cook for six minutes for soft-boiled eggs. Add vinegar if desired.
- Shock the eggs. Remove the eggs from the pot and place in an ice-water bath.
- Create the marinade. Mix together onion, garlic, green onion, chili pepper, sesame seeds, soy sauce, honey, and water in a bowl.
- Marinate the eggs. After cooling, peel the eggs and place them in an airtight container. Pour the marinade over the eggs, ensuring they are submerged. Let them marinate in the fridge for at least six hours or overnight.
Notes
For deeper flavor, marinate the eggs overnight. Store any leftover marinade for future use.
