- 4 chicken breasts or 6–8 chicken thighs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- Juice of 2 lemons
- 1 can artichoke hearts, drained
- 1 cup kalamata olives
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken with salt, pepper, oregano, and thyme.
- Heat olive oil in a large skillet over medium-high heat.
- Brown chicken on both sides until golden, about 4-5 minutes per side.
- Add minced garlic and sauté until fragrant.
- Pour in chicken broth and lemon juice.
- Add artichoke hearts and olives.
- Simmer for 20-25 minutes until chicken is cooked through.
- Garnish with fresh parsley before serving.
