- 1 lb sirloin steak (about 1-inch thick)
- 3 tbsp olive oil
- 2 garlic cloves (minced)
- 1 tbsp lemon juice (fresh)
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp salt
- ¼ tsp black pepper
- 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
- 1 cup roasted chickpeas (optional for paleo or keto)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- ½ red onion (thinly sliced)
- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; optional for dairy-free)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, squeezed dry)
- 1 tbsp lemon juice (fresh)
- 1 garlic clove (minced)
- 1 tbsp fresh dill (chopped)
- Salt & pepper (to taste)
- 3 tbsp olive oil (for vinaigrette)
- 2 tbsp lemon juice (fresh)
- 1 tsp honey (omit for Whole30)

Instructions
- Mix the marinade ingredients: 3 tbsp olive oil, 2 minced garlic cloves, 1 tbsp lemon juice, 1 tsp dried oregano, 1 tsp dried thyme, ½ tsp salt, and ¼ tsp black pepper. Coat the steak with this mixture and let it marinate for 30 minutes to 4 hours.
- Prepare the tzatziki by combining the Greek yogurt, ½ grated cucumber (squeezed dry), 1 tbsp lemon juice, 1 minced garlic clove, 1 tbsp fresh dill, and salt & pepper to taste. Chill in the fridge.
- Whisk together the vinaigrette ingredients: 3 tbsp olive oil, 2 tbsp lemon juice, 1 tsp honey, 1 minced garlic clove, ½ tsp dried oregano, and salt & pepper to taste.
- Sear the marinated steak in a hot skillet for 4-5 minutes per side, depending on your preferred doneness. Let the steak rest, then slice thinly.
- Layer the cooked grains in a bowl, top with sliced steak, and arrange cherry tomatoes, diced cucumber, sliced red onion, olives, and feta cheese. Finish with a drizzle of tzatziki and vinaigrette.
Notes
Let the steak marinate for several hours for best flavor. Use colorful vegetables to enhance presentation.
