  • 2 cups cooked grains (choose from brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo/keto)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh, for tzatziki)
  • 1 garlic clove (minced, for tzatziki)
  • 1 tbsp fresh dill (chopped)
  • Salt & pepper (to taste)
  • 3 tbsp olive oil (for vinaigrette)

  • 1 tsp honey (omit for Whole30)
  • 1 garlic clove (minced, for vinaigrette)

Instructions

  1. Begin by mixing the marinade ingredients. Coat the steak in the mixture, ensuring it covers the meat entirely. Let it marinate for a minimum of 30 minutes, allowing the flavors to penetrate, but for a more intense impact, marinate for up to 4 hours.
  2. Prepare the tzatziki sauce by combining Greek yogurt, grated cucumber (squeezed dry), fresh lemon juice, minced garlic, chopped dill, and seasoning. Mix thoroughly and chill in the fridge.
  3. Whisk together the vinaigrette ingredients: olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and pepper.
  4. Heat a skillet over medium-high heat. Sear the marinated steak for 4-5 minutes on each side, achieving a perfect crust while maintaining a tender center.
  5. Allow the steak to rest before slicing it thinly against the grain. This enhances tenderness and makes for a more enjoyable eating experience.
  6. Assemble the bowl by layering cooked grains, sliced steak, cherry tomatoes, diced cucumber, sliced red onion, kalamata olives, and crumbled feta (if using). Finish with a generous dollop of tzatziki and drizzle with vinaigrette.
