- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; optional for dairy-free)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, squeezed dry)
- 1 tbsp lemon juice (fresh, for tzatziki)
- 1 garlic clove (minced, for tzatziki)
- 1 tbsp fresh dill (chopped)
- Salt & pepper (to taste)
- 3 tbsp olive oil (for vinaigrette)

- 1 tsp honey (omit for Whole30)

Instructions
- Begin by mixing the marinade ingredients. Coat the steak in the mixture, ensuring it covers the meat entirely. Let it marinate for a minimum of 30 minutes, allowing the flavors to penetrate, but for a more intense impact, marinate for up to 4 hours.
- Prepare the tzatziki sauce by combining Greek yogurt, grated cucumber (squeezed dry), fresh lemon juice, minced garlic, chopped dill, and seasoning. Mix thoroughly and chill in the fridge.
- Whisk together the vinaigrette ingredients: olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and pepper.
- Heat a skillet over medium-high heat. Sear the marinated steak for 4-5 minutes on each side, achieving a perfect crust while maintaining a tender center.
- Allow the steak to rest before slicing it thinly against the grain. This enhances tenderness and makes for a more enjoyable eating experience.
- Assemble the bowl by layering cooked grains, sliced steak, cherry tomatoes, diced cucumber, sliced red onion, kalamata olives, and crumbled feta (if using). Finish with a generous dollop of tzatziki and drizzle with vinaigrette.
