Ingredients

  • 1 packet taco seasoning
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 1 cup shredded cheese
  • 1 box cornbread mix
  • Eggs (as directed on cornbread mix)
  • Milk (as directed on cornbread mix)
  • Optional toppings: sour cream, jalapeños, cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Stir in taco seasoning, corn, and black beans, and cook for a few more minutes.
  4. In a separate bowl, prepare the cornbread mix according to package instructions, adding eggs and milk.
  5. Spread the beef mixture in a greased baking dish.
  6. Pour the cornbread batter over the beef mixture.
  7. Sprinkle cheese on top.
  8. Bake for 25-30 minutes or until the cornbread is golden brown.
  9. Let it cool slightly before serving. Top with sour cream, jalapeños, and cilantro if desired.

Notes

For a vegetarian option, replace the beef with lentils or extra beans. Adjust the milk in the cornbread mix if it’s too dense.
