- 1 lb ground beef
- 1 packet taco seasoning
- 1 can corn, drained
- 1 can black beans, rinsed and drained
- 1 cup shredded cheese
- 1 box cornbread mix
- Eggs (as directed on cornbread mix)
- Milk (as directed on cornbread mix)
- Optional toppings: sour cream, jalapeños, cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Stir in taco seasoning, corn, and black beans, and cook for a few more minutes.
- In a separate bowl, prepare the cornbread mix according to package instructions, adding eggs and milk.
- Spread the beef mixture in a greased baking dish.
- Pour the cornbread batter over the beef mixture.
- Sprinkle cheese on top.
- Bake for 25-30 minutes or until the cornbread is golden brown.
- Let it cool slightly before serving. Top with sour cream, jalapeños, and cilantro if desired.
Notes
For a vegetarian option, replace the beef with lentils or extra beans. Adjust the milk in the cornbread mix if it’s too dense.
