Mexican Ground Beef Casserole

Description

A hearty and flavorful casserole that brings together seasoned ground beef, tortillas, and layers of melted cheese, perfect for family gatherings.


Ingredients

  • 2 lbs. ground beef
  • 1/2 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 (1 oz.) packets taco seasoning
  • 4 tablespoons tomato paste
  • 2 (10 oz.) cans Rotel, drained
  • 1 (15 oz.) can whole kernel corn, drained
  • 1 (15 oz.) can black beans, drained
  • 1 tablespoon chili powder
  • 1 (16 oz.) can refried beans
  • 12 corn tortillas
  • 2 cups (8 oz.) Monterey Jack cheese, shredded
  • 2 cups (8 oz.) cheddar cheese, shredded
  • Salt and pepper, to taste

Instructions

  1. Brown the ground beef in a Dutch oven over medium-high heat until fully cooked. Remove from heat and set aside. Drain any fat left in the pot.
  2. Add a little oil to the pot and sauté the diced onions until soft, about 3-4 minutes.
  3. Add minced garlic and stir for 30 seconds until fragrant.
  4. Return the beef to the pot. Fold in taco seasoning, tomato paste, and water as instructed on the seasoning packet. Simmer until the mixture reduces.
  5. Stir in drained Rotel, corn, black beans, chili powder, salt, and pepper. Simmer for an additional 5 minutes.
  6. Combine shredded Monterey Jack and cheddar cheese in a bowl.
  7. To assemble, lay 6 tortillas at the bottom of a 9×13 casserole dish. Spread half of the refried beans, then half of the beef mixture, and half of the cheese blend. Repeat with another layer of tortillas, remaining beans, beef mixture, and cheese.
  8. Bake uncovered at 350°F for 30 minutes until cheese is melted and bubbling.
  9. Let rest for 10 minutes before serving.

Notes

Consider adding jalapeños or bell peppers for extra flavor. Fresh ingredients will enhance the overall result.
