Instructions
- Prepare mushroom duxelles by finely chopping mushrooms, shallots, and garlic
- Sauté mushroom mixture until moisture evaporates
- Sear beef medallions briefly on all sides
- Cool beef and mushroom mixture completely
- Wrap beef in duxelles and puff pastry
- Brush with egg wash and bake until golden
