  • 2/3 cup sugar
  • 2 eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup milk, room temperature
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup mini chocolate chips (plus extra for the tops, if desired)

Instructions

  1. In a large bowl, mix the cooled, melted butter with the sugar, eggs, vanilla extract, and milk.
  2. Add the flour, baking powder, and salt to the same bowl, mixing well until everything is incorporated.
  3. Stir in the mini chocolate chips, ensuring they’re evenly distributed throughout the batter.
  4. Fill the prepared mini muffin tins all the way to the top with the batter and sprinkle additional mini chocolate chips on top, if desired.
  5. Bake the muffins for about 12 minutes, or until the edges turn golden brown.
  6. Once baked, remove from the oven and place them on a wire rack, allowing them to cool in the pan for 5 minutes before moving to the cooling rack to cool completely.

Notes

Store any leftovers in an airtight container. Reheat in the microwave for a few seconds to revive softness.
