- 1/2 cup butter, melted and cooled
- 2/3 cup sugar
- 2 eggs, room temperature
- 1 tsp vanilla extract
- 1/2 cup milk, room temperature
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/3 cup mini chocolate chips (plus extra for the tops, if desired)
Instructions
- In a large bowl, mix the cooled, melted butter with the sugar, eggs, vanilla extract, and milk.
- Add the flour, baking powder, and salt to the same bowl, mixing well until everything is incorporated.
- Stir in the mini chocolate chips, ensuring they’re evenly distributed throughout the batter.
- Fill the prepared mini muffin tins all the way to the top with the batter and sprinkle additional mini chocolate chips on top, if desired.
- Bake the muffins for about 12 minutes, or until the edges turn golden brown.
- Once baked, remove from the oven and place them on a wire rack, allowing them to cool in the pan for 5 minutes before moving to the cooling rack to cool completely.
Notes
Store any leftovers in an airtight container. Reheat in the microwave for a few seconds to revive softness.
