- 1 lb mini potatoes
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp butter
- 1/2 cup cheese (shredded)
Instructions
- Preheat the oven to 400°F (200°C).
- Boil mini potatoes in salted water until tender.
- Drain and let cool slightly.
- Place potatoes on a baking sheet and gently smash each one with a fork.
- Drizzle with olive oil, and sprinkle with salt and pepper.
- Roast in the oven for 20-25 minutes or until crispy.
- Remove from oven and top with butter and cheese before serving.

For added flavor, consider using fresh herbs like rosemary or thyme before roasting.
