Description

Crispy on the outside and fluffy on the inside, these mini smashed potatoes are a comfort food favorite that brings family and friends together.


Ingredients

  • 1 lb mini potatoes
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp butter
  • 1/2 cup cheese (shredded)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil mini potatoes in salted water until tender.
  3. Drain and let cool slightly.
  4. Place potatoes on a baking sheet and gently smash each one with a fork.
  5. Drizzle with olive oil, and sprinkle with salt and pepper.
  6. Roast in the oven for 20-25 minutes or until crispy.
  7. Remove from oven and top with butter and cheese before serving.
