- 2 teaspoons baking powder
- 1 teaspoon baking soda

- 1/2 teaspoon ground nutmeg

- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 1/2 cups applesauce
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or bundt pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a large bowl, cream together butter and sugars until light and fluffy. Beat in eggs one at a time, then stir in applesauce and vanilla.
- Gradually fold the dry ingredients into the wet mixture until just combined. Fold in walnuts if using.
- Pour batter into prepared pan, spreading evenly.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean and the cake springs back when touched.
- Allow to cool completely before glazing or serving.
Notes
- This cake tastes even better the next day as the flavors have time to develop.
- For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free flour blend.
