- 1 Large zucchini (200 g)
- 2 Eggs
- 2/3 cup Sugar (133 g)
- 1/4 cup Vegetable oil (60 ml)
- 1 tsp (5 ml) Vanilla extract
- 1 cup All-purpose flour (120 g)
- 1 tsp (5 ml) Cinnamon
- 1 tsp (5 ml) Baking powder
- 1/4 tsp (1 ml) Salt
Instructions
- Coat your baking dish with a non-stick spray, or alternatively, grease it with butter or line with parchment paper. I opted for a springform pan, but any dish fitting in the air fryer will do.
- Trim the zucchini by removing the ends and cut it into sizable pieces. Use a food processor with a shredding blade to grate the zucchini, or do it manually with a grater. Set the grated zucchini aside for later use.
- In a large mixing bowl, combine the eggs with sugar, oil, and vanilla extract. Whisk thoroughly until the mixture is well blended.
- Introduce the flour, cinnamon, baking powder, and salt to the bowl, stirring with a large spoon until the ingredients are fully mixed.
- Incorporate the grated zucchini into the mixture, stirring until it is evenly distributed.
- Transfer the mixture into the prepared baking dish. Position the dish in the air fryer and cook it at 320°F for 35 minutes.
- After 35 minutes, check if the bread is ready by inserting a toothpick or cake tester; it should come out clean. If not, continue cooking for an additional 5 minutes.
- Allow the bread to cool in the baking dish within the removed air fryer basket for 10 minutes. If using a springform pan, release the ring and remove the base. Place the zucchini bread on a plate and savor it!

- Thoroughly drain excess liquid from grated zucchini to avoid a soggy texture in the bread.
- Consider substituting some or all of the sugar with honey or maple syrup for a healthier option.
- Enhance the cinnamon flavor by sprinkling extra cinnamon on top before baking for a more pronounced taste.
