  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C)
  2. Mash the very ripe bananas until smooth
  3. Mix in melted butter
  4. Stir in sugar, beaten egg, and vanilla
  5. Sprinkle baking soda and salt
  6. Add flour and mix until just combined
  7. Pour into greased loaf pan
  8. Bake for 50-60 minutes or until toothpick comes out clean

Notes

  • Use very spotted or mostly brown bananas for best results
  • Don’t overmix the batter to prevent tough bread
  • Check doneness 5 minutes before recommended time
  • For egg-free version, substitute with 1/4 cup applesauce or additional mashed banana
