Instructions
- Collect all necessary items.
- Set your oven to 350°F (175°C) and prepare a 12-cup muffin pan by either greasing it or using paper liners.
- In a large mixing bowl, blend together the flour, sugar, baking soda, cinnamon, and salt.
- In another bowl, mix the oil, milk, egg, lemon juice, and vanilla extract until well combined.
- Add the liquid mixture to the dry ingredients, stirring just until combined, then gently incorporate the zucchini, chocolate chips, and walnuts.
- Distribute the batter evenly among the muffin cups, filling each about two-thirds full.
- Place in the preheated oven and bake until the tops are firm to the touch, approximately 20 to 25 minutes. Let them cool slightly in the pan before moving them to a wire rack to cool fully.
