  • Salt: 1/2 teaspoon (3g)
  • Cinnamon: 1 teaspoon (2g)
  • Nutmeg: 1/2 teaspoon (1g)
  • Ginger: 1/2 teaspoon (1g)
  • Cloves: 1/4 teaspoon (0.5g)
  • Pumpkin puree: 1 cup (245g)
  • Vegetable oil: 1/2 cup (120ml)
  • Large eggs: 2
  • Vanilla extract: 1 teaspoon (5ml)
  • Milk: 1/4 cup (60ml)
  • For the Streusel Topping:
  • All-purpose flour: 1/2 cup (65g)
  • Brown sugar: 1/3 cup (67g)
  • Cinnamon: 1/2 teaspoon (1g)
  • Butter: 1/4 cup (56g), melted
  • For the Maple Glaze:
  • Powdered sugar: 1/2 cup (60g)
  • Maple syrup: 2 tablespoons (30ml)
  • Milk: 1 tablespoon (15ml)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan and set aside.
  3. In a large bowl, combine 1 3/4 cups flour, 1 cup granulated sugar, 1/2 cup brown sugar, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon salt, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon ginger, and 1/4 teaspoon cloves.
  4. In a separate bowl, whisk together 1 cup pumpkin puree, 1/2 cup vegetable oil, 2 large eggs, 1 teaspoon vanilla extract, and 1/4 cup milk until smooth.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. To make the streusel topping, combine 1/2 cup flour, 1/3 cup brown sugar, and 1/2 teaspoon cinnamon in a small bowl.
  8. Stir in 1/4 cup melted butter until the mixture is crumbly.
  9. Sprinkle the streusel topping evenly over the pumpkin bread batter.
  10. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Remove the bread from the oven and let it cool in the pan for 10 minutes.
  12. Transfer the bread to a wire rack to cool completely.
  13. While the bread cools, make the maple glaze by whisking together 1/2 cup powdered sugar, 2 tablespoons maple syrup, and 1 tablespoon milk in a small bowl.
  14. Drizzle the maple glaze over the cooled pumpkin bread.
  15. Allow the glaze to set before slicing and serving.
