  • 1/2 cup vegetable oil (120 ml)
  • 1/2 cup granulated sugar (100 g)
  • 1/2 cup brown sugar, packed (100 g)
  • 2 large eggs
  • 1 teaspoon vanilla extract (5 ml)
  • 1 1/2 cups grated zucchini (about 220 g)
  • 1/2 cup chopped walnuts or pecans (60 g)
  • 1/2 cup dried cranberries (75 g)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan and set aside.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, beat the vegetable oil, granulated sugar, and brown sugar until well combined.
  5. Add the eggs one at a time to the sugar mixture, beating well after each addition.
  6. Stir in the vanilla extract.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Fold in the grated zucchini, walnuts or pecans, and raisins until evenly distributed.
  9. Pour the batter into the prepared loaf pan and smooth the top.
  10. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Remove the bread from the oven and let it cool in the pan for about 10 minutes.
  12. Carefully transfer the bread to a wire rack to cool completely before slicing.
