- 1 teaspoon baking powder (5 g)

- 1/2 cup vegetable oil (120 ml)
- 1/2 cup granulated sugar (100 g)
- 1/2 cup brown sugar, packed (100 g)
- 2 large eggs
- 1 teaspoon vanilla extract (5 ml)
- 1 1/2 cups grated zucchini (about 220 g)
- 1/2 cup chopped walnuts or pecans (60 g)
- 1/2 cup dried cranberries (75 g)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan and set aside.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat the vegetable oil, granulated sugar, and brown sugar until well combined.
- Add the eggs one at a time to the sugar mixture, beating well after each addition.
- Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the grated zucchini, walnuts or pecans, and raisins until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the bread from the oven and let it cool in the pan for about 10 minutes.
- Carefully transfer the bread to a wire rack to cool completely before slicing.
