- 1/2 cup chopped walnuts or pecans (optional) (60 g)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan and set aside.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, combine the vegetable oil, granulated sugar, and brown sugar.
- Add the eggs and vanilla extract to the wet ingredients and mix well.
- Stir the grated zucchini into the wet mixture.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- If using, fold in the chopped walnuts or pecans.
- Pour the batter into the prepared loaf pan, spreading evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes.
- Remove the bread from the pan and cool completely on a wire rack.
