  • 2 cups grated zucchini (about 300 g)
  • 1/2 cup chopped walnuts or pecans (optional) (60 g)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan and set aside.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, combine the vegetable oil, granulated sugar, and brown sugar.
  5. Add the eggs and vanilla extract to the wet ingredients and mix well.
  6. Stir the grated zucchini into the wet mixture.
  7. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  8. If using, fold in the chopped walnuts or pecans.
  9. Pour the batter into the prepared loaf pan, spreading evenly.
  10. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the bread to cool in the pan for 10 minutes.
  12. Remove the bread from the pan and cool completely on a wire rack.
